FL bakers have busy holiday
As visitors to the Capitolís 100th anniversary celebration Sunday enjoyed tours and cake, the Forest Lake bakers who prepared the 55-sheet monster rested. Country Home Bakery and Deli in Forest Lake was commissioned to prepare the anniversary cake. While the last minute job made for a long work weekend and extra deliveries of baking supplies, the huge cake was ready to go Sunday morning. Bakery owner John Lewis handled most of the cake baking, using 630 pounds of batter. Most of the decorating work was finished on Saturday, Jan. 1. Joelle Lewis, the bakeryís lead designer, shown here, took care of the decorating. She logged 14 hours on the job Friday and put in another nine hours on Saturday. An estimated 320 pounds of icing was used. The father-daughter duo had two hours Sunday to assemble the finished product at the Capitol. (Photo By Cliff Buchan)
