Robyn Dochterman, owner of St. Croix Chocolate Company in Marine, received top honors from the Bloomington Fine Arts Council.
She was bestowed with the 2012 Taste of Chocolate Best Chocolate Confection award. The winners of the 17th Annual Taste of Chocolate Competition were announced March 11.
Dochterman was recognized for a variety of hand crafted, painted and interesting and unexpected taste-combination chocolates.
As chocolatier of St. Croix Chocolate Company, she leads development and production of fine, fresh and beautiful artisan chocolates in the village of Marine on St. Croix.
After the recession brought an abrupt end to her career in journalism, Dochterman’s passion turned to pastry and fine chocolate. She learned European chocolate techniques from internationally acclaimed chefs at the French Pastry School in Chicago, the Barry Callebaut Chocolate Academy in Chicago, and the School of Pastry Design in Las Vegas.
Those techniques, along with exquisite local ingredients including organic cream and butter, maple syrup and even honey from her own backyard bee colonies, help Dochterman and St. Croix.
